Tracy Burgio, Culinary Instructor, BOCES
Tracy Burgio is a High School Culinary Instructor at BOCES in Batavia, NY, and co-owner of Chickpea and T-bone which offers catering and private chef services. Born and raised in Rochester, NY, Tracy worked in the front of the house for the first 20 years of her career, when she decided to attend the French Culinary Institute in NYC for Pastry Arts, where she graduated in 2009. Cooking has brought her to NYC, Chicago and Italy to cook with great Chefs. Tracy is passionate about Italian cuisine and French Pastry. In her spare time she enjoys traveling and entertaining friends with her wife and business partner Alexandra. They have three dogs together; Reggie, Tobiko, and Bobby Valentine, whom they love and spoil very much.

Samantha Buyskes, Owner of Simply Red Events
Samantha Buyskes, originally from South Africa, has been cooking, teaching and catering in the Finger Lakes for over 20 years. An extensive traveler, her heart is true to the Finger Lakes, showcasing the best of the best within our region. In 2011, she had the adventure of competing on Food Network’s Chopped, Season 6 premier episode. Her ingredients were goat’s brains and fish heads. Chef Samantha’s passion for food and community keeps her involved with amazing organizations such as Share our Strength and Foodlink. Recently Chef Samantha headed up a team of 7 amazing women from the Finger Lakes, showcasing some of the best at The James Beard House in NYC, January 2020. Find out more about Samantha here.

Terrell McLean, Owner and Pitmaster, Bubby’s BBQ
Terrell McLean built Bubby’s BBQ off of his father’s passion for good barbeque and his dream of one day owning his own restaurant establishment. Terrell’s father was known as Bubby Clutch. The loss of his father in 2015 inspired Terrell to bring his father’s dream to life; hence the name Bubby’s BBQ! Barbeque has always been a huge part of Terrell’s life. As a child, he and his family would travel to South Carolina, where Terrell’s mother is from. There, the family would enjoy hog and rocky road soda from their family owned barbeque establishment. Terrell’s Carolina roots are a large inspiration for his barbeque style and seasonal flavors. Terrell began his barbeque career in Rochester, NY, offering catering and pop-up collaborations with local businesses. Now, Terrell and Bubby’s BBQ have a permanent place to call home! Mike Speranza, CEC, Custom Culinary
An ACF Certified Executive Chef, Mike has been a Corporate Executive Chef with Custom Culinary since 2005. Prior to Custom Culinary, Mike was a Corporate Chef with Pillsbury and General Mills for 6 years. Mike has a 30+ year foodservice career including Executive Chef Positions in several Upstate NY hotels. Chef positions in Boston, Rochester and New York City include Executive Sous Chef, Banquet Chef, Chef Garde Manger, and Pastry Chef. Notably, Mike worked along-side Jean-Georges Vongerichten at Boston’s famed Restaurant Le Marquis de Lafayette. In his current position, Mike travels extensively throughout the United States. He has also traveled abroad to the countries of Japan, South Korea, Germany and India. Mike was named ACF Rochester Chef of the year for 2011, and continues to be active in the chapter, serving on the Board of Directors. Read more about Mike here.

Julie Camardo, CEO of Zweigle’s Inc.
Julie Camardo serves as the fifth-generation owner and CEO of Zweigle’s Inc. She was born in Rochester, NY and attended Mercy High School and received her BA degree from Providence College. Under Julie, Zweigle’s expanded three times and continues to grow in product diversification, sales and employees. The company is guided by four core values of quality, caring, accountability and continuous improvement. Julie is committed to the community where she lives and works. Julie sits is on the Board of Directors for MCC Foundation, ESL, Rochester Chamber of Commerce, Holy Childhood, Special Touch Bakery and 2020 United Way Campaign Chair.

Todd Klugh, Executive Chef, St. Ann’s Community at Chapel Oaks
Chef Todd Klugh’s culinary career began in Cleveland, Ohio, 25 years ago and blossomed in places such as Kempten, Germany, Kraljevo, Serbia and, finally, Rochester where he most recently worked at Grappa. A keen competitor, Todd represents St. Ann’s Community in a number of competitions, including the Alzheimer’s Association’s Culinary Clash. Chef Klugh won the People’s Choice Award at FOOD FIGHT 2018 and 2019.

Michael W. Macri, Executive Chef, Genesee Valley Club
Michael W. Macri, CEC, is currently the Executive Chef of the Genesee Valley Club in Rochester, NY. Chef Macri received his Certification as Executive Chef in December 2005 from the American Culinary Federation (ACF). He has also completed the American Bistro Program and “Controlling Your Bottom Line” at the Culinary Institute of America in Hyde Park, New York. A member of the ACF since May of 2002, Chef Macri is currently serving as a Trustee on the Board for the Rochester Chapter, and previously served as Sergeant at Arms, and two terms as Chapter President. Chef Macri was named 2019 and 2008 Rochester Chapter Chef of the Year, and has medaled in several ACF competitions. Most recently, he was crowned FOOD FIGHT 2019 Champion.

Stacey Pensgen, Meteorologist, News10NBC
Stacey is the evening meteorologist at News10NBC. She is proud to be born and raised in Rochester, and graduated from Fairport High School, & SUNY Brockport. Before her meteorology days, she was a competitive figure skater, competing both nationally and internationally. When she’s not on TV giving you the forecast, you can probably find her learning new “do it yourself” home renovations! Read more about Stacey here.

Pauly Guglielmo is the owner of The Craft Cannery in Genesee County. Specializing in helping early stage entrepreneurs realize their dreams by bringing their recipes to market, Pauly and his team are responsible for over 200 locally created packaged food products. Pauly also has a brand of his own, Guglielmo Sauce, a line of pasta sauces you can find on most local store shelves. Pauly is a board member of Rochester Rotary, Big Brothers Big Sisters, and the John Carroll University Rochester alumni association. He is a culinary instructor at New York Kitchen in Canandaigua as well as the YMCA in Pittsford. He lives in Brighton with his wife Ryann and son Leo. Read more about Paul and his sauce here.

Chef Jeffory McLean, or Cheffory as he is often referred, is a 2nd generation Chef & Culinary Educator with over three decades of experience with every facet of Culinary Arts including competition BBQ, regional Italian, Japanese, Korean, Latin & Bread Baking. His dynamic personality and vast knowledge of technique was heavily influenced by the first of the true culinary television personalities like Jaques Pepin, Graham Kerr, Julia Child, Jeff Smith, and Martin Yan.
